Lazy Recipe: Chicken Rice

Homemade Chicken Rice
Being typical Singaporean, my 3 kids simply adore Hainanese Chicken rice. Once a week, usually weekend, they will indulge in a wholesome meal of chicken rice over lunch. On weekdays, usually once a week or fortnight, I will prepare a servings for 2 for lunch before Joel sets off to school.


Sometimes  I prefer homemade, as even though the taste may not be as authentic, we can add additional ingredients for better nutrition for kids. Enclosed a lazy mummy recipe that is quick and easy to prepare, and you can customize the ingredients to your liking.







Ingredients

 

 








  


Ingredients for portion of 2 pax:

- 2 chicken drum stick (Skinned if you prefer   
  lean), you may use breast meat and increase 
  portion as preferred for appropriate serving size
- 2 spoons of chicken rice paste
- oyster sauce
- 1.5 to 2 cups of rice
- 1-2 fish cake (sliced thin or chunk as you prefer
- optional: Broccoli or any vegetable for two
  person portion, wolfberries

Preparation Instructions:

  1. Wash the chicken, cut into chunks and marinate with oyster sauce for about 15 minutes
  2. Wash and cut the fishcake into thin slice or small chunks as you prefer
  3. Wash the rice and add in appropriate amount of water to standby for cooking
  4. Add the Chicken Rice paste to the rice
  5. Empty the fish cake and chicken chunks
  6. Stir the mixture, and cook the rice till it's done, and the dish is ready to serve.

Optional:

(For additional nutrition, I will prepare a quick serving of vegetables to serve along)
  1. Wash the vegetable and cut appropriate length, size
  2. Simmer the vegetables (Optional: Add in wolfberries if preferred) over hot water for a few minutes (Care should be taken not to over cook them to avoid losing nutrients and yellowing the vegetables)
  3. Remove the water, and add in appropriate amount of oyster sauce and sesame oil to the vegetables.
  4. Toss the mixture, and the vegetables are ready to serve.
Though this is a quick preparation of a simple meal for the family, I hope it is able to provide sufficient nutrition and joy to your loved ones.
